There’s something about being on a tropical island that yells RAW FOOD! This is the first time I’ve been on a trip and really just felt at peace & in love. I don’t mean romantic love. I just mean love. Pure love & joy. This is just the first time that I’ve just allowed myself to be, and truly enjoy simple nature in all of its beauty. Walking along a beach has never been so peaceful and rewarding. The energy that vibrates from the sand & the waves at your feet. It’s really amazing. I used to be so held back by fear and thoughts of judgement. I would be so distracted with how I think others thought I looked- that I wouldn’t pay attention to what was around me, the beauty around me. Once you are able to let go of those distractions and thoughts which are so debilitating, a whole world is out there- waiting for you to just open your eyes! I have begun to open my eyes, and I really am being blown away.
This overwhelming joy got 10 x better when I stopped in at Mana Foods, the local grocery store in Paia. This place is just bustling with energy and love. The produce section is incredible! I don’t think I’ve ever seen so much wonderful, local, fresh fruit & vegetable in one small area, mostly all organic! What a magical place. So, it’s only natural that I made Sherry Strong‘s ‘Cool-Slaw’ for lunch today. This really is one of the best, most simple dishes you will ever make and the flavours are just a real treat to your taste buds! One thing that makes this slaw what it truly is, is a special grater! Sherry is selling these amazing tools from her school Jiivala, and I’m sure you may be able to buy them online too. They are just the perfect tool when it comes to shredding vegetables and fruits for this type of salad (or any salad, really). I’m sure other graters work just as well (well, maybe). So have a go! The more colour you can add to this slaw, the better!
- 2 whole carrots, grated
- 1 large granny smith apple, grated
- 1 lime (juiced & zested)
- 1/4 cup raw walnuts, chopped
- 1/4 cup dried fruit (raisins, cherries, dates, mulberries), chopped
- Combine carrots, apple & zucchini in a bowl together
- Zest your lime into the bowl
- Juice the lime into the bowl
- add your walnuts & dried fruit (and whatever else you choose to add as toppings)
- Mix together & serve! (Prepare right before eating otherwise the apple will begin to oxidize and brown)
